LUDOVIC POIRIER APPOINTED ASSISTANT FOOD & BEVERAGE DIRECTOR AT MOKARA HOTEL & SPA

Mokara Hotel & Spa, San Antonio’s only Forbes four-star hotel and spa, has appointed Ludovic Poirier as assistant food & beverage director at Mokara Hotel & Spa. In his new position, Poirier will help oversee all aspects of the award-winning property’s food and beverage operations – including Ostra, the hotel’s celebrated restaurant – on a daily basis in order to ensure all services offer the continued brand promise of “exceptional included.”

Poirier brings more than two decades of international experience in the luxury hotel industry to Mokara. Most recently, he worked as food and beverage director for The Inn at Dos Brisas, a Relais & Chateaux luxury property in Washington, Texas. Previously, Poirier was the general manager at The Tasting Room in Houston, where he successfully opened and managed the high-volume wine café. From 2008 to 2009, Poirier served as general manager of VOICE restaurant and lounge at Hotel ICON in Houston; prior to that, he was director of food and beverage at the Alden Hotel, also in Houston, where he was responsible for all F&B outlets including the acclaimed *17 restaurant. Poirier is also known for his role as the director of operations for Bistro Moderne – the highly-regarded French restaurant at Hotel Derek – in addition to serving as food and beverage manager at the Four Seasons Hotel in Houston, where he successfully oversaw the transformation of the Deville restaurant into Quattro.

Poirier got his start in the hospitality industry in France, where he functioned as butler to the Minister of Defense. Prior to his work with the Minister, he trained in Paris at the prestigious Residence Maxim's and later at the famed Hotel Ritz's L'Espadon, named "Best Hotel Restaurant in Paris." Poirier earned his education from culinary school in Laval, France.
